Side Dish

RISOTTO

Ingredients
1/2 cup olive oil
1/2 cup diced onion
3 tablespoons chopped garlic
1 each diced red bell pepper
3 cups carnaroli rice
3 quarts chicken stock or broth, hot
1/4 cup white wine
1/2 cup fresh grated parmesan cheese

Procedure
1.  Lightly brush a sauce pot with olive oil. Toast the rice in the pot over medium heat.
2.  Once the rice is toasted, add enough hot stock to just cover the rice. Stir often with a wooden spoon.
3.  While the rice is cooking, sweat the onion, garlic and peppers in the rest of the olive oil.
4.  Keep adding hot stock to the rice until it is cooked.
5.  Add the olive oil and onion mixture to the rice.
6.  When the risotto is ready to come off, add wine and cheese.
7.  Let rest 3 minutes and serve.
